Focus on Food Pairing
Restaurateurs – especially the young, urban scene from major cities in Europe and overseas – can look forward to the upcoming ProWein trade fair: the “urban gastronomy by #asktoni & ProWein” lounge will be featured for the third time. A tailor-made presentation of current trends and topics awaits the culinary scene – presented by Toni Askitis, a restaurateur from Düsseldorf, wine sommelier and influencer.
The program in the Lounge in Hall 4 will be as entertaining as the hip gastronomic scene. This is, of course, due to the combination of food and wine – the be-all and end-all of food service. But what are the basic principles of successful food pairing? What should restaurateurs pay attention to, how can they inspire and captivate their diners? Answers and inspirations will be provided in the four daily workshops, the centerpiece of the urban gastronomy Lounge, in an “infotaining” way.
The program will start daily at 10:00 am with “How to ProWein?” How should a visit to ProWein be prepared, what are the benefits of a trade fair visit? After all, the restaurateur has to choose from around 5,700 exhibitors from over 60 countries. The key question is: What are the basic principles of food pairing?
The second workshop at 12:00 pm will have the motto “Bring your own Bottle!” An international wine blogger will be invited to bring his/her favorite wine or one he/she discovered at ProWein. During the talks, visitors will then find out which dishes go best with this wine.
At 2:00 pm the music will start when wine growers from around the world will present a song that matches their wine. The vintner will reveal why they pair this wine with the selected music – music pairing, so to speak.
The highlight of the day will be the fourth workshop, when international dishes will be paired with international wines at 4:00 pm. For example, Miki Furue, a Japanese influencer living in Düsseldorf, will pair vegan dishes with selected wines.
