Beloved Local Restaurant Debuts New Chef and Reimagined Food & Beverage Menu on

White Bison Charges into Vail, COLocated in the heart of Vail Village, locals’ favorite White Bison will introduce a new food menu and beverage program upon reopening on December 15, 2016. Operated by San Francisco-based PlumpJack Group, White Bison brings New American comfort cuisine, and welcoming atmosphere to an unparalleled setting above Gore Creek in the Rocky Mountains.

White Bison Charges into Vail, COLed by local culinary talent Jake Burkhart, formerly chef at Colorado’s Aspen Kitchen, Burkhart features Colorado produce in White Bison’s newly reimagined menu. Appropriately, bison holds court on the menu, in signature dishes such as the White Bison Tartare topped with quail egg and served with crispy mushroom chips, fresh watercress, pickled pearl onions and a side of asiago toasted sourdough. Other items include a Baby Beet Salad with farm ricotta, Valencia orange, mustard greens, hearts of palm with a citrus vinaigrette, Roasted Apple & Parsnip Soup with spicy pumpkin seeds, sage brown butter, pomegranate, chestnuts and Bourbon Brined Pork Chop with shelling bean, cassoulet, herb bread crumbs and apple slaw. White Bison’s famous Crispy Wall-Eye Tacos and Bison Burger are prominently featured on the lunch menu, among other favorites. The dessert menu by pastry chef Natalie Barsov offers rustic, shareable sweets.

White Bison Charges into Vail, COThe PlumpJack Group’s seasoned cocktail duo Jacques Bezuidenhout and Ken Luciano are supervising White Bison’s beverage program and have hand selected Brandon Bigalke as beverage director on the ground in Vail. In addition to classic cocktails featuring seasonal ingredients, the bar highlights a selection of rare scotch, spirits and wines. Bigalke’s playfully named cocktail creations include Ducking the Rope with rye whiskey, sloe gin, benedictine, orange bitters; Yard Sale with gin, lemon, mint, cucumber, orange bitters, soda and Snow Bunny with vodka, angostura bitters, soda. Warm cocktails like Send It with red wine, winter spices and either rum, whiskey or cognac will please the masses at après ski, while shot + beer offerings will round out the menu.

White Bison’s signature cozy-chic interior is getting a refresher and greater emphasis on the bar experience with award-winning design firm ShopWorks designing a larger bar top to brighten the space and showcase the beverage program. Dark paneling and plush seating encourage cozy, après ski dining while an al fresco fire pit with views of Gore Creek and dramatic Rocky Mountains further highlight White Bison as the spot for larger parties.

White Bison is located at 223 Gore Creek Drive in Vail and will be open for dinner starting December 15th. Lunch, après ski and dinner will be served Wednesday through Sunday starting December 17th.
