YAYA, Chileno Bay Resort’s Female-Led Med-Latin Restaurant, Marks One Year: Specials All Month & 4.19 Dinner Celebration

One year into operations at Chileno Bay Resort & Residences, Auberge Resorts Collection, the Mediterranean and Latin American fusion restaurant, YAYA, is celebrating its success and unique perspective on local meets global with a First Anniversary Earth Day Dinner month-long specials that reflect powerhouse Chef Eliana Godinez’s local-meets-global approach to comfort cuisine.

YAYA: Chileno Bay’s 1-Year Celebration

  • Celebrating with YAYA Lovers: On April 19, Chef Godinez will lead guests through a celebratory menu for fans (affectionately called YAYA Lovers) featuring the best of YAYA’s locally sourced ingredients prepared through a Mediterranean lens, including standout dishes like her signature Raw Vegetable Platter with Lentil Dip and Sumac; house-made “air bread;” locally sourced Prawns “Aglio – Olio – Peperoncino” served with lemon; seasonal pastas and pizzas, and the showstopping Skillet S’mores for dessert.

 

  • YAYA Two Ways: For the month of April, guests staying at Chileno Bay Resort & Residences will receive a complimentary Yayarita, the restaurant’s signature cocktail, in their room upon arrival. The festive libation is a fresh and complex sip that has been on the menu since opening, and is made with aquavit, tequila general gorostieta, carrot and ginger shrub, and desert dust. What’s more, weekly anniversary special menus will include fresh local produce and catches alongside Mediterranean classics such as Fried Octopus with Chermoula, butternut squash, and pineapple; Striped bass with sunchoke, turnip, fried thyme, pine nuts, and lemon; and Platanos Con Crema, a smoked plantain dessert with Fleur de Sel caramel, vanilla pod cream, and vanilla crumble.

 

  • A Taste of Home Away from Home: Inspired by its name, an endearing term for grandmother in both Greek and Spanish, the eatery celebrates the greatest female culinary minds in the region and is helmed by Chef Eliana Godinez and Lead Mixologist Yared Alba. The menu is inspired by Chef Eliana Godinez’s rich understanding of cooking techniques from both Mexico and Italy’s Mediterranean – featuring indulgent, yet nourishing, recipes prepared with local ingredients and paired with a superb and innovative beverage program.
