Already a successful dining concept at its sister Millennium & Copthorne hotels in the U.K., this much anticipated launch in L.A. represents the first Bugis Street Brasserie in the U.S. and the fifth restaurant of its kind globally for the group.

The enticing menu features signature Singaporean and Malaysian specialties such as Singapore Laska (vermicelli noodles, shrimp, chicken, spicy coconut soup and Thai basil) and Hainanese Chicken and Rice (poached chicken, chicken flavored rice and chili sauce), as well as Cantonese and Szechuan dishes such as Kung Pao Scallops (vegetables, spicy chili, peanuts and black bean sauce) and Wonton Noodle Soup (chicken broth, minced pork dumplings, egg noodle and scallions). Fresh and authentic ingredients such as Thai basil and Malaysian spices are sourced locally from open-air farmers markets in Chinatown. At the helm of the cuisine at Bugis Street Brasserie is head chef Horace He who brings with him 15 years of Chinese culinary experience in the greater L.A. area.

The 150-seat, split-level restaurant lends itself perfectly to quick, casual lunches as well as special group events. With brasserie-style high ceilings, the upper level features inviting natural light, while the décor throughout features wood floors, themed light fixtures, and black and white artwork depicting authentic street scenes from Singapore’s Bugis Street. The open design and modern dining room reflect an upscale setting while offering a relaxed culinary experience. Four private dining rooms allow for parties from six people up to 30.

Bugis Street, Singapore’s largest street shopping district, was named after the legendary seafaring merchants from the island of Sulawesi. These maritime people were regarded as master shipbuilders who traveled across the seas of the Indonesian archipelago collecting everything from sandalwood to spices, exotic feathers and even gold, to sell at faraway lands like Singapore. Their cargo was traded at major ports for European and Chinese manufactured goods they would bring back to their homeland.

Following a rather notorious history, Bugis Street experienced a revival in the mid ‘90s to become an iconic destination. Frequented by tourists and locals alike, visitors revel in its 800 concept stalls, featuring designer labels, traditional art and eclectic street food. Today this thriving marketplace, along with the history of the proud Bugis people and their spice trade, influences the aromatic dishes enjoyed at Bugis Street Brasserie at Millennium Biltmore Hotel Los Angeles as well as four other locations including Millennium Gloucester Hotel London Kensington, Copthorne Tara Hotel London Kensington (Bugis Street), Copthorne Hotel Birmingham and Copthorne Hotel Slough-Windsor.
